Welcome to Hilton Macarons, founded by husband and wife team James and Andrea. From our macaron kitchen located in the heart of the historic town of Framlingham, Suffolk, our daily pursuit is to craft the finest and most delicious macarons.

The perfect macaron should have a crunchy outer shell, a slightly chewy center that is not too sweet and a generous filling with a flavour that seamlessly fills the whole macaron.

Our award winning macarons are hand-made with Italian meringue and use only the finest ingredients, all natural fillings and free range eggs. They are all vegetarian, gluten-free and alcohol free.

Our story begins by the sea. It’s where we both grew up – Harry in Scotland by St. Cyrus beach  and Ben on the island of Jersey. We both have early memories of coastal adventures with our friends, exploring the tidal edge and racing the waves to discover secret islands and sandbanks, only revealed at low tide. That sense of adventure and freedom that the sea awakens in all of us is something we wanted to capture in the subtle coastal flavours of Tidal Rum.

From the moment we planted our first vines in 2004, our vision has been to create the finest vintage wines using grapes exclusively from our own vineyards.

We grow the highest quality Chardonnay, Pinot Noir and Pinot Meunier grapes across the Gusbourne Estate, with 60 hectares in Appledore, Kent and 30 hectares next to the Goodwood Estate in West Sussex. These predominantly Burgundian clones yield smaller volumes of intensely flavourful fruit, which thrive in our unique microclimates. This exceptional produce is the vital first ingredient in making our award-winning sparkling wines, all crafted using the traditional method.

Sprigster Drinks

Sprigster Drinks grew out of the vibrant flavours of our English country garden. We wanted to offer a proper grown-up, alcohol-free drink to guests at our acclaimed country restaurant, Pythouse Kitchen Garden. So, we started plucking scented seasonal sprigs from our colourful patch and making drinks to go with our delicious and nutritious dishes.

Our blend of all-natural ingredients combined to create a sophisticated and deeply satisfying non-alc. aperitif. We realised we’d hit upon a taste experience that our guests loved. Nicknaming our flavourful drink ‘Sprigster’, we set about crafting the perfect alternative aperitif.

Louisa’s Honey

We are Louisa’s Honey, a family run business based in London with a discovery of extraordinary honey from Italy that we would like to share! Our Italian producer has been a family-run business for three generations now, established in 1929 and ongoing! They are the largest producers in
Italy. 

We have the sole rights to supply the UK.  We launched Louisa’s Honey in March 2022 at the London Excel, with Gennaro Contaldo. Louisa’s honey is the real nectar of Italy! We sustainably source the finest, purest honey from bees farms that are located in the beautiful valleys of Italy! Identifying the best geographical areas of production! They are honeys collected in tightly selected areas, far from possible forms of pollution and environmental contamination. We only work with bee farmers that use traditional, natural treatments and methods! Bees are treated with respect and are never treated with any unnatural products or chemicals.

We have 6 exciting flavours, that are pure, natural and not infused: Bosco, Coriander, Lime, Chestnut, Citrus, Acacia & we have a 7th speciality infusion, our Acacia with Ginger.
